Sometimes you need a break from the busy life of technology and fluorescent lighting. So, grab your camping buddies and unwind. Go enjoy the cool Summer breeze and the sound of crickets chirping. While you're at it, get creative with some scrumptious campfire creations!
5 Campfire Recipes Under 5 Ingredients:
Farmers Omelet
Eggs (Scrambled)
Potatoes
Peppers
Onions
Directions: Dice peppers, onions and potatoes and add to cast iron skillet over campfire flame until fully cooked. Scramble eggs and pour over ingredients - stir immediately. Cook for 2 - 4 minutes until desired egg texture. May add shredded cheese, chives and your favorite seasonings to top it off!
Baked Potato Boats
Potato (Russet works best)
Bacon bits
Shredded cheese Chives
Directions: Poke fork throughout the potato and then wrap in foil. Place potato over campfire flame for about 1-2 hours. When cooked, cut in half and add bacon bits, shredded cheese, chives and your favorite seasonings. Cook over fire again until the cheese melts (about 5 minutes).
Camping Quesadillas
Medium size flour tortillas
Shredded chicken
Shredded cheese
Black beans
Your favorite salsa
In a cast iron skillet, place quesadilla and top with cooked shredded chicken, black beans, and cheese (about 7 minutes). Once melted, add your favorite salsa or some sour cream!
Hobo Dinner
Chopped meat (beef, chicken or fish)
Diced potatoes
Carrots
Onion
Chop your favorite meat and coat in olive oil. Dice potatoes, carrots and onions. Wrap all ingredients together in foil and cook over a campfire for about 1-2 hours. Season to taste.
Shrimp Foil Packs
EZ peel shrimp
Corn on the cob
Jalapenos
Peel & clean shrimp, cut & season corn on the cob then add to foil. Top with jalapenos, lemon juice, bay seasoning and a dash of your favorite light beer. Cook in foil over campfire flame for 1-2 hours.
