Veggie Friendly Dinner Recipes!
Have you noticed any of the great chances happening in the environment since pretty much the whole world has slowed down and stayed at home? There is decreased pollution, an increase in wildlife throughout nature and overall great improvements happening in the environment. Speaking of great improvements to the environment, one great way to keep up these changes is to incorporate less meat into your diet. Have you watched “The Game Changers”, “Forks over Knives” or “What the Health” on Netflix during your time at home? All of these great documentaries show some of the incredible benefits for not only the environment, but your body too when reducing or completely eliminating meat consumption and switching to a plant-based diet! Since this world is completely change right now, why not give it a shot? Don’t worry, you don’t have to turn completely vegan! But how about trying a Meatless Monday Meal to test it out? Below are some of our favorite vegetarian meals that are super easy for you to cook at home (and they’re super yummy!) to get you started!
Who doesn’t love a nice warm chili on a cold day? Or who doesn’t love low-prep meals? This vegetarian chili is not only delicious, but super easy to make! By substituting the meat for beans, this chili keeps its same great taste but vegetarian style! This recipe is one of my favorites to make quick, or to toss in a crock pot for 6-8 hours on a medium heat when I’m super busy!
Vegetarian Stuffed Peppers
Another one of my favorite meals that is super easy to make and customize to your taste buds! These Mexican inspired, vegetarian stuffed peppers are delicious and provide so much flavor! They’re also totally customizable to your favorite color bell pepper, favorite type of bean, favorite type of cheese, and anything else you’d love to add in (my favorite is corn)!
Yet another super simple, super good and super customizable vegetarian meal. Switch out the vegetables listed in this recipe for all your favorites or purchase prepackaged stir-fry vegetables from the grocery store for an even quicker prep time! Toss these stir-fry veggies over some rice or noodles and you have yourself another fabulous meal!
