Dinners to Make School Nights Easier
Weeknight Lazy Lasagna
8 ounces of uncooked lasagna pasta broken into 2-inch pieces
1 cup part-skim ricotta cheese
1 cup shredded mozzarella cheese, divided
⅓ cup grated parmesan cheese
1 jar (24 ounces) pasta sauce with meat
Preheat the oven to 400℉. Cook the lasagna noodles according to the package.
In a large bowl, mix ricotta cheese, ½ cup of mozzarella cheese, and parmesan cheese. Drain the noodles and mix cheese and noodles together.
Spread 1 cup pasta sauce into bottom of greased 11x7 inch baking dish. Layer halk with noodle mixture and 1 cup sauce. Layer the remaining noodle mixture and sauce. Sprinkle the remaining cheese on top.
Cover with greased foil, and bake until golden (10-15 minutes).
1 egg, lightly beaten
5 tbsp of ketchup, divided
2 tbsp of prepared mustard
½ cup dried bread crumbs
2 tbsp onion soup mix
¼ tsp salt
¼ tsp pepper
1 lb of ground beef
¼ cup sugar
2 tbsp of brown sugar
2 tbsp of cider vinegar
In large mixing bowl, combine egg, 2 tbsp of ketchup, mustard, bread crumbs, dry soup mix, salt, pepper. Crumble beef over mixture and mix well.
Shape into oval loaf.
Place into shallow 1 qt microwave-safe dish. Cover and microwave on high 10-12 minutes or until no pink and thermometer ready 160℉. Drain.
Meanwhile in small bowl, combine remaining ketchup, sugars, and vinegar; drizzle mixture over loaf. Cover and microwave for 2-3 longer so it is heated thoroughly.
Let stand for 10 minutes before slicing and serving.
Cheesy Chicken & Broccoli Orzo
1 ¼ cup of uncooked Orzo pasta
2 packages of frozen broccoli and cheese sauce (10 oz. each)
2 tbsp of butter
1 ½ pound of boneless skinless chicken breasts, cut into cubes
1 medium onion, chopped
¾ tsp of salt
½ tsp of pepper
Cook Orzo pasta according directions and separate begin heating broccoli and cheese sauce according to the package.
In a large skillet heat butter over medium heat, add chicken, onion, salt, and pepper. Cook and stir for 6-8 minutes until chicken is cooked thoroughly and onions are tender.
Stir in Orzo and broccoli cheese sauce into skillet and heat thoroughly.
