Dinners to Make School Nights Easier


Weeknight Lazy Lasagna

Ingredients

  • 8 ounces of uncooked lasagna pasta broken into 2-inch pieces

  • 1 cup part-skim ricotta cheese

  • 1 cup shredded mozzarella cheese, divided

  • ⅓ cup grated parmesan cheese

  • 1 jar (24 ounces) pasta sauce with meat

Directions

  1. Preheat the oven to 400℉. Cook the lasagna noodles according to the package.

  2. In a large bowl, mix ricotta cheese, ½ cup of mozzarella cheese, and parmesan cheese. Drain the noodles and mix cheese and noodles together.

  3. Spread 1 cup pasta sauce into bottom of greased 11x7 inch baking dish. Layer halk with noodle mixture and 1 cup sauce. Layer the remaining noodle mixture and sauce. Sprinkle the remaining cheese on top.

  4. Cover with greased foil, and bake until golden (10-15 minutes).

15-Minute Meatloaf

Ingredients

  • 1 egg, lightly beaten

  • 5 tbsp of ketchup, divided

  • 2 tbsp of prepared mustard

  • ½ cup dried bread crumbs

  • 2 tbsp onion soup mix

  • ¼ tsp salt

  • ¼ tsp pepper

  • 1 lb of ground beef

  • ¼ cup sugar

  • 2 tbsp of brown sugar

  • 2 tbsp of cider vinegar

Directions

  1. In large mixing bowl, combine egg, 2 tbsp of ketchup, mustard, bread crumbs, dry soup mix, salt, pepper. Crumble beef over mixture and mix well.

  2. Shape into oval loaf.

  3. Place into shallow 1 qt microwave-safe dish. Cover and microwave on high 10-12 minutes or until no pink and thermometer ready 160℉. Drain.

  4. Meanwhile in small bowl, combine remaining ketchup, sugars, and vinegar; drizzle mixture over loaf. Cover and microwave for 2-3 longer so it is heated thoroughly.

  5. Let stand for 10 minutes before slicing and serving.

Cheesy Chicken & Broccoli Orzo

Ingredients

  • 1 ¼ cup of uncooked Orzo pasta

  • 2 packages of frozen broccoli and cheese sauce (10 oz. each)

  • 2 tbsp of butter

  • 1 ½ pound of boneless skinless chicken breasts, cut into cubes

  • 1 medium onion, chopped

  • ¾ tsp of salt

  • ½ tsp of pepper

Directions

  1. Cook Orzo pasta according directions and separate begin heating broccoli and cheese sauce according to the package.

  2. In a large skillet heat butter over medium heat, add chicken, onion, salt, and pepper. Cook and stir for 6-8 minutes until chicken is cooked thoroughly and onions are tender.

  3. Drain Orzo.

  4. Stir in Orzo and broccoli cheese sauce into skillet and heat thoroughly.
